Singapore’s most celebrated chef Justin Quek will headline an inspiring calendar of events this festive season at AYANA Resort and Spa Bali, presenting a degustation menu of his signature dishes at Dava restaurant.
For three nights from 27-29 December, Chef Justin will join Dava as guest chef, taking time out from his role heading up The Sky on 57, the pinnacle dining destination at Singapore's exclusive Marina Bay Sands precinct. His degustation menu for Dava (scroll down to view) will feature signature dishes from his Franco-Asian menu at The Sky on 57.
“These are some of the most popular dishes at Sky on 57, proven dishes such as the live lobster sautéed in Asian pepper sauce, which is a variation on the famous Singaporean dish, pepper crab," s`id Chef Justin. "In one week, I sell 200 live lobsters alone. People love it. In Bali, we will recreate the same dish but using local ingredients. The degustation menu is about quality, subtlety and balance of flavors.”
He will be hosted by Dava's Chef de Cuisine Jusman So, another renowned Singaporean who's gained international recognition for his distinctive style partnering classic French technique and presentation with Asian flavors. Open to the public, this culinary collaboration is part of an exciting festive program at AYANA, which sparks to life with Christmas tree lighting on 30 November:
